Healthy Vegan Quinoa & Bean Salad Meal Prep Recipe in 30 mins

Hi everyone!!

As we are getting busy with school work and life in general, it's important to remember to eat healthy. Now, I know that cooking can be the last thing on your list when you're super busy. But I do think that meal prepping is a great way to make sure you have healthy foods in the fridge, ready to grab and eat on the spot. Quick and easy! I like to meal prep on Sundays, so I have snacks and meals ready to go during the week, when I'm really busy and would not have time to cook myself a nice meal. This is why I am sharing with you this quinoa and bean salad recipe. Also cool fact but it's a vegan recipe so for all the vegans out there, check the recipe out! It takes about 30 minutes to make but it will definitely save you some time during the school week and it makes about 5 portions, so one for each day of the school week. It's perfect for a lunch or a side dish with dinner. Check out the video to view how easy and quick it is to make. The Recipe

The recipe is actually inspired by Ricardo's Quinoa and Bean Salad recipe recipe. I have adapted the recipe to make it more student friendly. So I've changed a couple things in the recipe for things that we almost all have in our kitchens and for things that make the recipe even faster to whip up!


Grocery List

I made a grocery list that you can simply screenshot before going to the store, to make sure you have everything you need to make this salad. It will help you save some time when you're at the grocery store and make sure that you don't forget anything!














Cost of making the salad

Since we're all students and most of us are careful with our money, I thought it would be nice for you to know how much it costs to make the salad. Now, obviously, the prices were adapted on a per salad basis. So you might need to buy an entire bag of quinoa before making the salad, making it more expensive at first, but you'll be able to make more than one salad with that quinoa so the cost is split up. The grand total to make the salad is 7.67$ and it makes about 5 portions, so the cost per portion is of 1.53$ ! So cheap!!!
